Default Chronic overheating

My 2001 Monty Ltd overheats predictably. If I start it first thing in the AM, it is fine. When I stop for an errand, and re-start, it will spike into the hot zone and stay there for 3-5 minutes before dropping back to normal. Also, when running hot, if I accelerate or climb a hill, the temp seems to drop.

Any ideas?
