What offset should my hitch tongue have? 0"? 2 1/2"? 3"?

How do I decide? I want to buy one tongue for general purpose, multi trailer use.

Do you mean the vertical offset? I think it depends on your trailer doesn't it? Do trailer's have an industry standard height?

Yes, I mean the vertical. I don't own a trailer...I want to be able to tow multiple, different ones but, as I am a cheap Yankee, I won't buy one.

Any ideas regarding what the "Standard" ball height is?
