Default Tire size driving habits

So I'm looking to change up my trucks' shoes. I bought them used and there is so much space in the wheel wells, they looks so empty . I need to fill it with bigger shoes! So here's my plan. Swap out my stock size Cooper AT's (265/70/15) for some 32 x 11.5 x 15 AT's while keeping the stock 15 x 7 rims on my SR. So here's what I'm expecting:

Pro's: More ground clearance, better highway cruising RPM (~gear ratio change, maybe better mileage on highway?), more stable/planted feel, more off-road grip, meaner look.

Con's: Slower acceleration, less nimble, speedo off, worse braking?

I know some of you guys have made similar swaps, please any experience or feedback? It's my first Monty, hell my first truck!
