Default Bigger tires for endeavor??? Help

Went to tire shop and wanted some tires with tread to go off roading and though snow drifts, ect., but got shot down. Apparently Endeavors have the front spring 1" above the tire and you cant install bigger tires. Anyone have an idea on what to do to get some 31" tires on this suv? Maybe new shock/springs?

I measured and there is 1 and 9/16" clearance from the top of the tire tread to the strut. In theory 245/70R17 should fit as that's about 0.78" taller. But I have yet to find anyone that could verify this.
