What are the largest tires you can install on the 2008 Mitsubishi Outlander XLS 18 Inch wheels without rubbing.?

If u can't find the answer here check tirerack.com. I have used them to search for the right wheel size and decent snow tires. I am pretty sure they can give you recommendations. I have just checked their website about your inquiry but no dice. I'd suggest to call them instead. good luck!

245 won't rub but the stock 18" rims are only 7" wide so it's not recommended to go wider than 235 max.

Is it better to have more Width on the tire or Height? Can others share their different tire sizes on their 2007-2009 Outlanders? Any Rubbing issues?

Depends on your situation. More width and lower profile tired will give you better traction and handling. The lower the profile the less flex in extreme handling. But the low profile tires have little cushion on bumps let alone pot holes.
