Does anyone know how this is achieved in an Outlander 2007?

Carefully...I've done it once on one side. Flip seats forward and unbolt the front hinge from the car. Putting them back in is much harder.

Would you mind explaining the process in more detail? It's kinda odd there's zero tutorials on this online.
