Did you just check the reserve for theradiator only? or did you also check the radiator? im my 2001 gt, i had what seems like the same problem. car gets hella hot, give it gas/rev up your engine and it cools down faster than it heated up. what is happening is that you might not have coolant in the radiator, and your cap on the reserve is ****ed up, thats why your radiator is not taking more coolant from the reserveand adding it to your radiator. the cap is not a bid deal. your car heats up at low rpms, then reving up the engine, the radiator sends a lot of air throu your cooling system, and cools it down, but without coolant, you can **** up your engine badly.
So if your car heats up at low rpms and cools down fast if you rev your engine, most likely thats the problem.
When your car is cool, and ONLY when your car is cool, take off the cap of the radiator, and check if you have any coolant inside. you should be able to see it. there are 2 black hoses, one goinginto the top of the radiator, and one gomingfrom the bottom,squeez/pump the bottom hose with the radiator cap open, and you should at least hear water/coolant splashing inside the radiator. if you hear air (like i did) your radiator is empty. and if it is empty, dont jsut add water, fill it with radiator coolant.
