Jet Valve Elimination Pros/Cons?

Jet Valve Elimination Pros/Cons?
Okay, I have an '87 model G54B that's getting a new head. Question - should I get rid of the jet valves all together, or replace them? (seems like most new heads come without them). What are they really for, and will it matter on a stock motor with a Weber carb? Thanks!!
