Default i-Pod jack for 2007 VRX Outlander

Hi there,
Bought a 2007 Outlander VRX earlier this month. Very pleased with the vechicle except the inability to play my i-Pod or any other mp3 player through the Fosgate stereo. Must be getting old as I assumed that as the Fosgate says it can play mp3 files, I would just be able to plug my I-Pod in rather than have to write my tunes to a CD first (which seems a backward step). While I gather a jack can be installed by removing the central console, I'm not sure what's involved and am nervous about scratching the cheap plastic finish (especially here in the Shaky Isles aka New Zealand where we are all a bit on edge at the moment). Can someone walk me through what the options are and the steps to be followed (photos appreciated!).

It takes less than a minute to get the stereo out...you can pull it out easily without scratching anything. All the parts you pull at can be done using your hands only. The screws can be taken out without scratching anything (its not visible even if you do).

Once you get it off, its just splicing in 3 wires and thats pretty much it.

Thanks, but can you be more specific about how you access the stereo and which three wires you splice? I'm damned if I can work out which panels you pull.
